Extra Virgin Olive Oil
Extra Virgin Olive oil is easily the healthiest cooking oil you can use. If you find the taste of extra virgin olive oil to be too strong, my suggestion is to try and give it a chance. At first I thought it was way too strong and used extra light olive oil for months but then I gave the extra virgin a chance and really grew to absolutely love it. Even if you don't cook with it you can use it. It goes great on almost all cooked vegetables and can be used as a healthy substitute for butter on popcorn, salad dressing, or to add some zest to rice cakes. Also works great as a mayonaise for canned tuna or salmon and can be added to any cooked fish.
Light olive oil that does not say "expeller pressed" on the bottle may not be as good for you as it may be chemically altered and closer to hydrogenated oils.
- Dr. Weil on Olive Oil - "...it appears to protect against both cancer and heart disease (by increasing blood levels of HDL, the "good" cholesterol), and it has antioxidant activity."
- Dr. Weil on Hydrogenated Oils - "...quite a significant difference in terms of increasing your risk of cardiovascular disease, cancer and other problems. ... There is reason to believe these fats cause derangements of cell structure, thus promoting cancer."
