Quinoa

    Quinoa, pronounced keen-wah, is a grain-like seed from the Goosefoot family, Chenopodiaceae. Quinoa is extremely delicious and can be used in place of rice for most recipes. It tastes kind of like a cross between rice and egg noodles. It's the kind of food that could easily be a staple in American households like rice and potatoes are, kids should love it too. It's extremely nutritious, high in fiber, protein and complex carbs. You cook it like rice, follow the instructions on the bag. One important tip though. Quinoa contains a bitter coating that can ONLY be removed by putting the quinoa is a pot of water, covering the pot and shaking it. Then strain out the foam. This must be done at least 8 to 10 times, after each shaking they'll be less foam and the water will be clearer. Shaking is the only method that works, rinsing it under water(no matter how strong the pressure) does not work. Once it's cooked, just salt it up and eat it like rice. Or you can add pasta sauce to it(they do sell quinoa pasta) or use it as a healthy subsitute for egg noodles(refined carbs) in soup recipes. It can be found in any health food store.
